Grilled Shrimp & Veggie Skewers: A Flavorful Summer Delight
Ingredients:
1 pound large shrimp, peeled and deveined
2 zucchinis, sliced into rounds
1 red bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 red onion, cut into chunks
Cherry tomatoes
3 cloves garlic, minced
1/4 cup olive oil
Juice of 1 lemon
1 teaspoon dried oregano
1 teaspoon paprika
Salt and black pepper to taste
Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes before grilling)
Instructions:
Prepare the Marinade:
In a bowl, whisk together minced garlic, olive oil, lemon juice, dried oregano, paprika, salt, and black pepper to create the marinade.
Marinate the Shrimp:
Place the peeled and deveined shrimp in a shallow dish and pour half of the marinade over them. Toss to coat evenly. Allow the shrimp to marinate for at least 15-30 minutes in the refrigerator.

Preheat the grill to medium-high heat.

Place the skewers on the preheated grill and cook for 3-4 minutes per side or until the shrimp are opaque and the vegetables are tender with a slight char.
