Grilled Shrimp & Veggie Skewers: A Flavorful Summer Delight

Ingredients:

  • 1 pound large shrimp, peeled and deveined

  • 2 zucchinis, sliced into rounds

  • 1 red bell pepper, cut into chunks

  • 1 yellow bell pepper, cut into chunks

  • 1 red onion, cut into chunks

  • Cherry tomatoes

  • 3 cloves garlic, minced

  • 1/4 cup olive oil

  • Juice of 1 lemon

  • 1 teaspoon dried oregano

  • 1 teaspoon paprika

  • Salt and black pepper to taste

  • Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes before grilling)

Instructions:

  1. Prepare the Marinade:

    • In a bowl, whisk together minced garlic, olive oil, lemon juice, dried oregano, paprika, salt, and black pepper to create the marinade.

  2. Marinate the Shrimp:

  5. Brush with Marinade:

  6. Preheat the Grill:

    • Preheat the grill to medium-high heat.

  7. Grill the Skewers:

    • Place the skewers on the preheated grill and cook for 3-4 minutes per side or until the shrimp are opaque and the vegetables are tender with a slight char.

  8. Serve and Enjoy:
