Homemade Scones with Berry Compote & Clotted Cream
Ingredients:
For the Scones:
2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, cold and cut into small pieces
1/2 cup whole milk
1 large egg
1 teaspoon vanilla extract
For the Berry Compote:
2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
1/4 cup granulated sugar
1 tablespoon lemon juice
Zest of one lemon
For the Clotted Cream:
1 cup heavy cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Instructions:
1. Scones:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Add the cold butter pieces to the dry ingredients. Use your fingertips to rub the butter into the flour until the mixture resembles coarse crumbs.
In a separate bowl, whisk together the milk, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Turn the dough onto a lightly floured surface and gently knead it a couple of times. Pat the dough into a circle about 1 inch thick.
Use a round biscuit cutter to cut out scones and place them on the prepared baking sheet.
Bake for 12-15 minutes or until the scones are golden brown. Allow them to cool on a wire rack.
2. Berry Compote:
In a saucepan, combine the mixed berries, sugar, lemon juice, and lemon zest.
Cook over medium heat, stirring occasionally until the berries break down and the mixture thickens (about 8-10 minutes).
Remove from heat and let it cool. The compote will continue to thicken as it cools.
3. Clotted Cream:
In a mixing bowl, whip the heavy cream until soft peaks form.
Add the powdered sugar and vanilla extract, and continue to whip until stiff peaks form.
4. Assemble:
Once the scones are cool, split them in half.
Spread a generous dollop of clotted cream on each half.
Spoon some berry compote over the cream.
Place the other half of the scone on top.
