Mango-Glazed Chicken Quarters

Wow, it’s HOT outside! While these brutal summer months take their toll on most of Florida’s fruits and veggies, mangoes are now in season and plentiful at our vendors Dusty’s Produce and C+F Produce. Pair this with Red’s Farm chicken for a delicious and easy recipe to make from ingredients found at the Venice Farmers Market!

This recipe for mango-glazed chicken quarters is a great way to use up ripe mangoes. It's also a flavorful and moist dish that is perfect for a summer barbecue.

Ingredients:

  • 4 chicken quarters, skin-on and bone-in from Red’s Farm

  • 1 tablespoon olive oil from Earth’s Complete

  • 1/4 cup mango chutney from our previous recipe

  • 1/4 cup honey from Jamie’s Jams or Earth’s Complete

  • 1 tablespoon lime juice

  • 1 teaspoon ground ginger

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon salt

  • 1/8 teaspoon black pepper

Instructions for Baking:

  1. Preheat oven to 400 degrees F (200 degrees C).

  2. In a large bowl, combine the chicken quarters, olive oil, mango chutney, honey, lime juice, ginger, garlic powder, salt, and pepper.

  3. Toss to coat the chicken quarters evenly.

  4. Place the chicken quarters in a single layer on a baking sheet.

  5. Bake for 30-35 minutes, or until the chicken is cooked through and the glaze is golden brown.

  6. Serve immediately.

Instructions for Grilling:

  1. Preheat grill to medium heat.

  2. In a large bowl, combine the olive oil, mango chutney, honey, lime juice, ginger, garlic powder, salt, and pepper. Remove approx. 1/8 cup for the glaze at the end.

  3. Add chicken quarters to bowl. Toss to coat the chicken quarters evenly.

  4. Grill the chicken quarters for 15-20 minutes, or until cooked through.

  5. Baste the chicken quarters with the remaining glaze during the last few minutes of grilling.

  6. Serve immediately.

Tips:

  • For a spicier glaze, add 1/4 teaspoon of cayenne pepper.

  • If you didn’t make mango chutney, you can use 1/4 cup of mango puree mixed with 1 tablespoon of honey.

  • You can also add other spices to the glaze, such as turmeric, cumin, or coriander.

  • Mango-glazed chicken quarters can be served with rice, quinoa, or grilled vegetables.
