Elote (Mexican Street Corn) Recipe

June 2024 we launched our first Chef Demo at the market featuring our resident Chef and owner of Spiked Pickles at the market!


Elote is the best summer side packed full of flavor! Purchase items from this recipe from our market vendors. We purchased corn, lime, and avocados from Dusty’s Produce!

Ingredients:

  • 3 ears of corn from Dusty’s Produce

  • 1 cup of avocados, crema, or mayo

  • 1/2 cup cilantro leaves and stems

  • 1/2 cup cotija cheese or parmesan

  • 1/3 cup tajin

  • Lime wedges for garnish

Instructions:

  1. Combine finely minced cilantro, cheese, and tan, set aside.

  2. If a grill is available, grill corn in the husk on high heat until the outside of the husks look almost burnt. This will impart a smoky flavor that will change your thinking of pre-husking corn forever.

  3. After grilled remove husks and discard. Very carefully, cut the corn in half, then with a cleaver or sharp knife cut down the center in half, then cut those in half. You should end up with 8 niblets per ear.

  4. Char the corn niblets for 1 minute each side. IF doing this on a griddle or cast iron, you’re looking for some charred bits here and there.

  5. While corn is hot, coat with crema or mayo, then sprinkle with the cheese and tan mixture. Serve immediately with a wedge of lime.
