Ingredients:
1 pound assorted seafood (shrimp, mussels, clams, scallops, fish fillets, etc.)
2 tablespoons olive oil

1 bell pepper, diced
1 carrot, diced
1 celery stalk, diced
1 can (14 oz) diced tomatoes, undrained
1 cup fish or seafood broth
1 cup dry white wine
1 teaspoon dried thyme
1 teaspoon dried oregano
1 bay leaf
Salt and pepper to taste
Fresh parsley, chopped, for garnish

Instructions:
Prepare Seafood:
Clean and devein shrimp, scrub mussels and clams, and pat dry fish fillets. If using larger fish fillets, cut them into bite-sized pieces.
Sauté Aromatics:
In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onions, garlic, bell pepper, carrot, and celery. Sauté until the vegetables are softened.
Add Tomatoes and Broth:
