Peppermint Bark
Peppermint bark is a delightful treat, especially popular during the holiday season. Here's a simple recipe to make this sweet and refreshing confection at home:
Ingredients:
12 ounces high-quality white chocolate, chopped or in chips
12 ounces high-quality dark or semi-sweet chocolate, chopped or in chips
1 teaspoon vegetable oil, divided
1 teaspoon peppermint extract, divided
1/2 cup crushed peppermint candies or candy canes
Instructions:
Line a baking sheet with parchment paper or a silicone baking mat.
In separate microwave-safe bowls, melt the white chocolate and dark/semi-sweet chocolate. Microwave in 30-second intervals, stirring after each interval until the chocolate is smooth.
Add 1/2 teaspoon of vegetable oil and 1/2 teaspoon of peppermint extract to each bowl of melted chocolate, and stir well to combine.
Pour the dark/semi-sweet chocolate onto the prepared baking sheet, spreading it into an even layer with an offset spatula.
Place the baking sheet in the refrigerator for about 10-15 minutes to allow the dark/semi-sweet chocolate to partially set.
Once the first layer has set, pour the melted white chocolate over the dark/semi-sweet chocolate layer, spreading it evenly.
Immediately sprinkle the crushed peppermint candies over the white chocolate layer, gently pressing them into the chocolate.
Return the baking sheet to the refrigerator and chill for about 30-45 minutes until the bark is completely set and firm.
Once set, break the peppermint bark into pieces using your hands or a knife.
Store the peppermint bark in an airtight container in the refrigerator. It makes a lovely homemade gift or a delicious treat for yourself during the festive season! Adjust the amount of peppermint extract or candies based on your preference for mintiness.
