Whole, fresh chicken from Red’s Farm
Jam from Jamie’s Jams
Honey from Earth’s Complete or Jamies Jams
Olive Oil from Earth’s Complete
Ingredients:
1 whole chicken
1 can of beer
1/4 cup of your favorite jam (apricot, peach, or raspberry work well)
1 tablespoon of honey
1 tablespoon of soy sauce
1 tablespoon of olive oil
1 teaspoon of garlic powder
Salt and pepper
Instructions:
Preheat your grill to medium-high heat.
In a small bowl, whisk together the jam, honey, soy sauce, olive oil, garlic powder, and a pinch of salt and pepper.
Open the can of beer and pour out about 1/4 cup of the liquid. Set the can on a sturdy surface and place the chicken over the can, so the can is inside the cavity of the chicken. Use the legs to balance the chicken on the can.
Brush the chicken with the jam glaze, making sure to get it in all the nooks and crannies.
Carefully transfer the chicken to the grill and cook for about 1 1/2 to 2 hours, or until the internal temperature of the thickest part of the chicken reaches 165°F.
Brush the chicken with the remaining jam glaze every 20 minutes or so while it cooks.
Remove the chicken from the grill and let it rest for 10 minutes before carefully removing it from the can. Discard the can and carve the chicken as desired.
