Stir-Fry Vegetables and Mushrooms

Assorted fresh mushrooms from Petrichor Mushrooms
Ingredients:
2 tablespoons vegetable oil
1 onion, chopped
2 garlic cloves, minced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 cup sliced mushrooms
1 zucchini, sliced
1 yellow squash, sliced
1/4 cup soy sauce
2 tablespoons oyster sauce
1 tablespoon cornstarch
1/4 cup chicken or vegetable broth
2 green onions, sliced
Salt and pepper to taste
Instructions:
Heat the vegetable oil in a wok or large skillet over high heat.
Add the chopped onion and minced garlic and stir-fry for about 1 minute.
Add the sliced bell peppers, mushrooms, zucchini, and yellow squash to the skillet and stir-fry for another 5-6 minutes or until the vegetables are tender but still slightly crisp.
In a small bowl, mix together the soy sauce, oyster sauce, cornstarch, and chicken or vegetable broth until well combined.
Pour the sauce into the skillet with the vegetables and stir until the vegetables are coated with the sauce.
Add the sliced green onions to the skillet and continue to stir-fry for another 1-2 minutes.
Taste the stir-fry and add salt and pepper as needed.
Serve the stir-fry over cooked rice or noodles, and enjoy!
