Grilled Vegetable Skewers

You can make these incredible grilled vegetable skewers at home easily and with ingredients found at the Venice Farmers Market every Saturday!

  • Produce from C+F Produce, Dusty’s Produce, and Fresh Harvest

  • Olive oil from Earth’s Complete

Ingredients:

  • 2 zucchinis, sliced into rounds

  • 2 bell peppers, seeded and cut into chunks

  • 1 red onion, cut into chunks

  • 1 pint cherry tomatoes

  • 1/4 cup olive oil

  • 2 cloves garlic, minced

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

  • Skewers

Instructions:

  1. Preheat a grill to medium-high heat.

  2. Soak the skewers in water for at least 10 minutes to prevent them from burning on the grill.

  3. In a small bowl, whisk together the olive oil, minced garlic, lemon juice, dried oregano, salt, and pepper.

  4. Thread the zucchini, bell peppers, red onion, and cherry tomatoes onto the skewers.

  5. Brush the vegetable skewers with the olive oil mixture.

  6. Place the skewers on the preheated grill and cook for about 5-6 minutes per side or until the vegetables are tender and lightly charred.

  7. Remove the skewers from the grill and let them cool for a few minutes before serving.

  8. Serve the grilled vegetable skewers as a side dish or as a main dish with a side of rice or a salad. Enjoy!
