Farmers Market Pickled Vegetables Recipe
Ingredients:
2 cups assorted fresh vegetables (carrots, cucumbers, radishes, cauliflower, bell peppers, etc.), thinly sliced or cut into sticks
2 cups white vinegar or apple cider vinegar
2 cups water
2 tablespoons sugar
2 tablespoons salt
Optional: garlic cloves, peppercorns, mustard seeds, fresh herbs (dill, thyme, or bay leaves) for flavor
Instructions:
Prepare the Vegetables: Wash and slice the vegetables into thin rounds, sticks, or bite-sized pieces as desired. Place them in a clean glass jar or jars.
Make the Pickling Liquid: In a saucepan, combine the vinegar, water, sugar, salt, and any optional spices or herbs you choose to use. Bring the mixture to a boil, stirring until the sugar and salt dissolve completely.
Pour Over the Vegetables: Carefully pour the hot pickling liquid over the prepared vegetables in the jar, ensuring they are completely submerged. Use a spoon to remove any air bubbles.
Cool and Seal: Allow the pickling liquid and vegetables to cool to room temperature. Once cooled, seal the jars tightly with their lids.
Refrigerate and Let them Pickle: Place the sealed jars in the refrigerator. Let the vegetables pickle for at least 24 hours or longer for more intense flavor. The pickled vegetables will keep well for several weeks in the refrigerator.
