Shrimp Scampi
Venice, the City on the Gulf, has many delectable seafood options. One of our favorite ways to cook seafood is in a simple pasta dish. This recipe for Shrimp Scampi is quick and easy to make, and it is sure to become a family favorite. You can find almost all of these items at the Venice Farmers Market every Saturday from the vendors listed below.
Seafood/Shrimp from Maggie’s Seafood
Pasta from The Pasta Machine
Garlic from C+F Produce
Parmesan cheese from Stamper Cheese
Olive Oil at Earth’s Complete
Ingredients:
1 pound shrimp, peeled and deveined
1/4 cup olive oil
1/4 cup butter
2 cloves garlic, minced
1/2 teaspoon red pepper flakes
1/4 cup white wine
1/4 cup chicken broth
1/4 cup grated Parmesan cheese
1 pound pasta
Salt and pepper to taste
Instructions:
In a large skillet, heat the olive oil and butter over medium heat.
Add the shrimp and cook for 2-3 minutes per side, or until pink and cooked through.
Remove the shrimp from the pan and set aside.
Add the garlic and red pepper flakes to the pan and cook for 1 minute, or until fragrant.
Add the white wine and chicken broth and bring to a simmer.
Reduce the heat to low and cook for 2-3 minutes, or until the sauce has thickened slightly.
Return the shrimp to the pan and cook for 1 minute, or until heated through.
Stir in the Parmesan cheese and season with salt and pepper to taste.
Cook the pasta according to the package directions.
Drain the pasta and add it to the pan with the shrimp and sauce.
Toss to coat and serve immediately.
Tips:
If you don't have white wine, you can substitute chicken broth or vegetable broth.
For a vegetarian version, omit the shrimp and add 1/2 cup of cooked and crumbled tofu.
Serve with a side salad and crusty bread for a complete meal.
