Ingredients:
2 tablespoons olive oil

2 cloves garlic, minced
2 carrots, peeled and diced
2 celery stalks, diced

1 yellow squash, diced
6 cups vegetable or chicken broth
1 cup fresh green beans, trimmed and chopped
1 cup corn kernels (fresh or frozen)
1 teaspoon dried thyme
1 teaspoon dried oregano

Instructions:
Prepare the Vegetables: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
