Farmers Market Salad

Ingredients:

  • Mixed salad greens (spinach, arugula, lettuce)

  • Assorted fresh vegetables (cucumbers, radishes, carrots), thinly sliced or chopped

  • Avocado, diced

  • Fresh herbs (parsley, basil)

  • Optional: nuts (walnuts, almonds), crumbled cheese (feta, goat cheese)

  • Dressing: Olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper

Instructions:

  1. In a large bowl, combine mixed greens, sliced/chopped vegetables, diced avocado, and herbs.

  2. In a small jar, mix together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper to make the dressing. Shake well.

  3. Drizzle the dressing over the salad and toss gently.

  4. Top with nuts and crumbled cheese if desired.
