Butternut Squash Soup
Ingredients:
1 butternut squash, peeled and cubed
1 onion, diced
2 cloves garlic, minced
4 cups vegetable or chicken broth
1 teaspoon thyme
Salt and pepper to taste
Olive oil
Instructions:
In a large pot, sauté onion and garlic in olive oil until translucent.
Add cubed butternut squash, thyme, salt, and pepper. Cook for a few minutes.
Pour in the broth and bring to a boil. Reduce heat and simmer until squash is tender, about 20-25 minutes.
Use an immersion blender or transfer in batches to a blender to puree until smooth.
Adjust seasoning and serve warm.
