Butternut Squash Soup

Ingredients:

  • 1 butternut squash, peeled and cubed

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 4 cups vegetable or chicken broth

  • 1 teaspoon thyme

  • Salt and pepper to taste

  • Olive oil

Instructions:

  1. In a large pot, sauté onion and garlic in olive oil until translucent.

  2. Add cubed butternut squash, thyme, salt, and pepper. Cook for a few minutes.

  3. Pour in the broth and bring to a boil. Reduce heat and simmer until squash is tender, about 20-25 minutes.

  4. Use an immersion blender or transfer in batches to a blender to puree until smooth.

  5. Adjust seasoning and serve warm.
