Ingredients:
4 large cucumbers, peeled and diced
1 cup plain Greek yogurt or sour cream
1/2 cup fresh mint leaves, plus extra for garnish
2 cloves garlic, minced
2 tablespoons fresh lemon juice
2 tablespoons olive oil
Salt and pepper to taste
Optional: a drizzle of olive oil, sliced cucumbers, or additional mint leaves for garnish
Instructions:
Prepare the Cucumbers: Peel the cucumbers and dice them. If the cucumbers have large seeds, you can scoop them out before dicing for a smoother soup.
Blend the Ingredients: In a blender or food processor, combine the diced cucumbers, Greek yogurt (or sour cream), fresh mint leaves, minced garlic, lemon juice, and olive oil. Blend until smooth.
Season the Soup: Season the blended mixture with salt and pepper to taste. Adjust the seasoning according to your preference.
